An Italian-inspired caserole that can be thrown together quickly. Easy and delicious. This can make either one 9″x13″ pan or two 9″x9″ pans (you can freeze one for later).
Preheat oven to 400 degrees.
Spray baking pan(s) with cooking spray.
Brown sausage and drain. Ground beef or ground turkey will also work, just season them well. Place sausage in baking pans.
Add vegetables to the hot skillet. Cook until onions are translucent. Feel free to add any more vegetables you may have on hand (see note).
(Optional: add wine to skillet and cook for a couple more minutes.)
Add vegetables (and wine, if using) to the baking pans.
Add pasta to the baking pan.
Pour pasta sauce over the mixture in the baking pan. Fill jar of sauce with water and pour that into the baking pan as well. Mix everything in the baking pan together well.
Cover with foil and bake for about an hour. Check at 45 minutes and add a little more water if it looks like the liquid is gone before the pasta is al dente.
When pasta is soft and liquid is absorbed, remove foil and sprinkle cheese over the pasta bake. Put it back into the oven for 5 minutes or so until cheese is melted.
Remove from the oven and let sit for about five minutes.
Serve and enjoy.
Note: feel free to add red pepper flakes, more garlic, and other veggies. Whatever sounds good to you.
