Easy summer dinner for all those wonderful zucchini! Chicken, zucchini and tomatoes…yum, yum!
1. Heat olive oil in large frying pan over medium-high heat.
2. Sauté chicken and garlic in olive oil until no longer pink.
3. Reduce heat to low.
4. Add zucchini, onion, tomatoes, salt, pepper, and Italian herbs to pan.
5. Simmer for 30 minutes or until zucchini is tender. Stir occasionally.
6. Serve over brown rice.
7. Top with Parmesan cheese.
*Add your fresh garden herbs and tomatoes in place of preserved items. Adding fresh tomatoes may increase cooking times.
