I had some leftover chicken breast and was trying to think of something to use it for and this is what I came up with. This is so easy and so yummy!
Remove stems from mushrooms and clean out inside with spoon. Sprinkle each with a pinch of salt and pepper and 2 tablespoons of olive oil.
Cut chicken breast in cubes, saute in 2 tablespoons of olive oil, season with salt and pepper and minced garlic for about 5 mins. Remove from heat.
Spray casserole with non stick coating spray.
Heat white sauce in small sauce pan till warm.
Divide the chicken between the two mushrooms, top with 1/4 cup white sauce on each and top each with two slices of Swiss cheese.
Bake at 350 for 30 Minutes
*when serving, top each with remainder of sauce.

This was excellent. I did use cream cheese instead of the swiss only because I had some cream cheese to use up. The swiss would be wonderful too and will try it that way also.
