These tender stuffed pork chops melt in your mouth! Filled with smoked gouda, a hint of bacon and fresh parsley, you’ll be wishing for more!
1.Preheat an outdoor grill to medium heat or preheat skillet on the stove top to medium heat if cooking inside.
2.In a small bowl, mix together the cheese, bacon, parsley, and black pepper.
3.Lay the pork chop flat on a cutting board. With a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. If using a boneless pork chop, cut a pocket, stopping 1/4 inch away from the opposite edge of the pork. Stuff cheese mixture into pocket, and close with a wooden toothpick. Brush the meat lightly with oil, season with salt and more black pepper if desired.
4.If grilling, lightly brush the grill with oil. Grill over medium heat for 5 to 8 minutes on each side, or until pork is done. If cooking inside on a skillet, cooking times and instructions are about the same as outdoor grilling times.

Holy cow that sounds good! My fiance adores pork chops and I adore bacon and cheese, so how can we go wrong? I will be making this soon! Also, thanks for the comment, AZJ22…..those boneless pork chops at Sam’s would be great for this!

I’ve made a version of these for quite some time and always get compliments on them! After the bacon is out of the pan, I sear the chops in the leftover bacon grease for some color and finish them in the oven at 350 for 20-30 minutes. I use the boneless chops from Costco, which are 1.5-2″ thick so great for making a nicely sized pocket in!
