Stuffed Mozzarella Chicken

Description
A great make-ahead chicken that’s full of flavor.
Ingredients
- 8 pieces Chicken Cutlet
- 1 can Diced Tomatoes, Undrained
- 1 box Stuffing Mix, Any Flavor
- 1 cup Shredded Mozzarella Cheese
- ¼ cups Fresh Basil, Chopped
- 1 Tablespoon Dried Oregano
- 1 bottle Roasted Red Pepper Dressing And Marinade
Preparation
Preheat oven to 350F.
In a large bowl, combine dry stuffing mix, undrained tomatoes, cheese and herbs. Place a small amount on each cutlet and secure with toothpicks. Continue until all 8 cutlets are prepared. Place in a 9 x 13 in glass dish and pour dressing over everything. Top with additional cheese. Bake uncovered for 35 minutes.
