Comfort food for lazy people.
While preparing the chicken, preheat your oven to 350 degrees. Have ready four or five toothpicks to seal each chicken breast.
Prepare Stovetop stuffing according to package instructions and set aside to moisten (or use homemade if you prefer). While stuffing is moistening, pound each chicken breast flat with a meat tenderizer. Place a few tablespoons of stuffing on top of each flattened breast. Close the chicken around stuffing and seal shut with toothpicks.
Spray a sufficiently sized baking pan with cooking spray. Place rolled up breasts in pan and pour undiluted mushroom soup over breasts, making sure to cover all the meat.
Cover with foil and bake in 350 degree oven for 20 minutes. Remove foil and spoon soup over the chicken again (it will be much runnier now). Replace foil and bake for another 10-20 minutes or until chicken is fully cooked. Goes well with mashed potatoes and steamed broccoli.
