Turkey burger mixed with mushrooms, blue cheese, fresh chives, dijon mustard. Topped with grilled onions and fresh baby spinach on a toasty bun.
In a large mixing bowl, add ground turkey, diced mushrooms, blue cheese, chives, dijon, salt, and pepper. Form 4 patties. Grill onions on an indoor grill with a little olive oil, salt, and pepper. Next, grill hamburger buns over the same spot you just grilled the onions. Remove buns when they are nice and toasty, and place the turkey burgers on the grill pan. Cook for 5 minutes on one side, flip and cook an additional 5-6 minutes, till cooked through. Assemble burger by topping each patty with grilled onions and fresh baby spinach leaves. Serve with homemade baked potato fries!
