Description

Simple and light using the vegetables you probably already have on hand! Was my favorite thing to make years ago when I never had any time.

Ingredients

  • 1 pound Tri Color Penne (or Any Pasta)
  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 whole Onion, Diced
  • 2 whole Bell Peppers, Diced (I Used 1 Red, 1 Orange)
  • 2 whole Tomatoes, Chopped
  • 1 Tablespoon Butter
  • 2 pinches Salt And Pepper, to taste
  • Arugula, For Garnish

Preparation

Boil a pot of water and cook your pasta until al dente. Drain and set aside.

Heat olive oil in a skillet on medium heat and add in garlic, onion, and bell peppers. Mix around and cook for 3-4 minutes. Add in tomatoes and toss to heat through.

Add in cooked pasta to the skillet as well as butter. Sprinkle on salt and pepper then toss to coat everything.

Transfer to a serving plate and garnish with arugula. Enjoy!
