Description

If you like spinach dip, you’ll love this casserole!

Ingredients

  • 1 pound Penne Or Spiral Pasta
  • 2 Tablespoons Olive Oil
  • ½ whole Onion
  • 2 cloves Minced Garlic
  • 2 whole Boneless, Skinless Chicken Breasts, Cubed
  • 10 ounces, weight Frozen Spinach, Defrosted/drained
  • 3 whole Eggs
  • 1 cup Milk
  • 1-½ cup Sour Cream
  • 2 cups Shredded Italian Blend Cheese
  • ¾ cups Grated Parmesan Cheese

Preparation

1. Boil pasta according to directions. Drain, set aside.

Meanwhile …

2. Heat olive oil over medium high heat. Saute onions until translucent. Add in the minced garlic at the end (so it does not burn and become bitter).

3. Add the diced chicken breasts; cook until browned.

4. Stir in the defrosted and drained spinach; saute everything together for a few minutes.

5. Put the cooked pasta and chicken/spinach mixture into a greased 9×13 pan.

6. Mix together the eggs, milk, sour cream and shredded cheese. Stir into the chicken, spinach and pasta.

7. Top with grated Parmesan cheese. Bake at 375F for 35 minutes, or until bubbly.

Hello Yummymummy,

Just made this casserole tonight for my hubby, 4 year old and 10 month old and me! Hubby loved it, 4 year old tried a bit (she’s finicky!) and 10 month old loved it!! I made a few altercations to the recipe… such as adding mushrooms and artichoke hearts to the onion and garlic saute, added cayenne pepper, made a breadcrumb, parmesan, basil and seasoning topping. Was such a great family meal!!

This was great! I added chopped asparagus and mushrooms, and used penne pasta and it was really tasty!

I’m sorry, but this just wasn’t very good. The spinach was stringy and overall this dish just didn’t have enough flavor. I even added artichoke hearts and a little marinade from them, white wine, extra salt and pepper and red pepper flakes.

Basically a good dinner dish. I cut the recipe in half, and it seemed to work beautifully (one whole egg, and the egg white of the second).

As it was my first time making this dish, I followed the recipe as is. Next time I probably will add the artichokes and white wine, as it is missing a little umph!

This is my second time making this dish, and it is fabulous!
Some changes I made:
– a little bit of white wine and butter in the chicken/spinach mixture at the very end of the cooking process for a bit more flavor, as well as some salt and pepper.
-I used 4 cloves of garlic instead of 2.
-I found a whole pound of pasta to be too much. I used about 2/3 of a pound, and I used mezze penne which is a smaller penne.
-I found that 2 breasts were not enough, so I used three this second time I made it.
-I added a jar of marinated artichoke hearts, chopped up, because I love them with spinach!
Ya’ll need to make this recipe, it is fantastic and a great base recipe that is easy to tailor to you and your family’s taste! Thanks for posting!
