My last recipe for our month of healthy alternatives to favorite foods is one that created itself. Using ingredients that I had on hand I came up with this tasty treat one Saturday for lunch. It was easy and satisfying and tasted wonderful.
Preheat oven to 350 F.
Heat olive oil in a skillet over medium heat. Add spinach and garlic and saute for approximately 10-15 minutes until the flavors begin to meld and the water is cooked out of the spinach. Remove from heat and mix in the salt, pepper and feta cheese.
Spray a small (8×8) casserole dish with cooking spray. Lay 5 of the dough sheets in the bottom of the dish. Place the spinach mixture in the middle of the dough sheets and sprinkle with the Parmesan cheese. Place the remaining 5 dough sheets on the top. Fold the edges of the bottom layer of phyllo dough over the top edges of dough and roll/pinch to seal.
Bake in a 350 F oven for approximately 30 minutes or just until the dough begins to crisp up and turn golden brown.
