Tender baby spinach and spicy arugula pesto is a mouthwatering way to eat your veggies.
Wash and pat dry the arugula and baby spinach. Add the arugula, spinach and garlic into a food processor. Put the lid on and process until well combined. With the food processor running, slowly stream in the olive oil until fully combined. Turn off the food processor and remove the blade. Spoon the “pesto” into a large bowl and stir in the Parmesan cheese. Add salt to taste. Serve over warm noodles of your choice.
