I absolutely love hummus and any opportunity I can get to use it I will, it adds so much flavor instead of regular mayo and its healthier as well.
Assemble sandwich. Butter the outsides of the two pieces of bread; on the insides of each slice place a slathering of mustard and hummus, then add turkey, cheese, spinach and the other slice of bread (butter side out). Toast all together in a panini press or simply on a skillet and enjoy!
