Description

A lovely spicy, peanuty sauce over spaghetti noodles and vegetables. I really prefer natural peanut butter in this, but that is up to you. Altering the peanut butter and honey can dramatically change this dish, so if you don’t like it one way, try it again altering some ingredients.

Ingredients

  • 8 ounces, weight Spaghetti Noodles
  • 1 cup Broccoli Florets
  • 1 whole Carrot, Julienned (thin Strips)
  • ½ whole Green Bell Peppers, Chopped
  • ½ cups Sliced Mushrooms
  • ½ cups Chicken Or Vegetable Stock
  • 3 Tablespoons Soy Sauce
  • 2 Tablespoons Natural Peanut Butter (2-3 Tbsp)
  • 2 Tablespoons Honey
  • 1-½ Tablespoon Fresh Ginger, Peeled And Minced (or 1/2-3/4 Dried)
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Ground Coriander
  • Crushed Red Pepper Flakes (1/2 Tsp= Mild 3/4 Tsp=hot)
  • 4 cloves Garlic, Minced ( Less If You Don't Love It Like Me!)

Preparation

Cook 8oz pasta (spaghetti or linguine) until done and set aside.

Saute your veggies of choice (I prefer the ones above) in a pan with a little oil, until cooked. Set aside.

Stir together vegetable stock, soy sauce, peanut butter, honey, ginger, cumin, coriander, red pepper flakes and garlic in a small sauce pan.

Cook over medium heat until peanut butter and honey melt and sauce is heated through.

Add noodles, stir fried veggies, any meat you may include (a few chicken breasts cut in strips is good) and toss to coat.

I have made this twice and it is fabulous! I use more veggies and leave out the honey. Great dish.

Wonderful!! I was trying to decide what to do with the chicken I had taken out of the freezer for dinner and I came across this recipe. Since it’s 90 degrees today, I made this into a cold salad. I grilled the chicken, made the sauce on the stove, cooled it down, added cucumber, peas, carrots, and red peppers. Very easy dinner for such a hot day. I also added lime juice to the sauce/dressing, and some fresh basil. Used rice noodles and it was divine with a sauv blanc.

Delicious! I used a dash of red pepper flakes, but added a few shakes of Sriracha – perfectly spicy and peanutty! A little cilantro and a squeeze of lime juice is a perfect garnish for this. Thanks for sharing! This is one of the best peanut-noodle dishes I’ve ever had!
