Popular topping for salads or as a filling for tacos/burritos.
Trim visible fat from the roast and place it in a slow cooker. Add 1 cup of water. Cook on high for 3-4 hours. When pork is done, shred with fork and add it back into the crock pot. Add one bottle tomatillo salsa and the brown sugar. Stir to combine well.
Use as Burrito/Taco/Enchilada/Quesadilla filling or on top of a taco salad.
Mix equal parts ranch dressing, tomatillo salsa, fresh cilantro in food processor for a WONDERFUL salad dressing!
