I have no idea where this came from, but my family has always eaten it and it is very good and easy to make.
Wash your potatoes. Prick them all over with a fork. Cook in the microwave to soften.
Cut potatoes in rounds. Slice up the onion. Cut kielbasa sausage in rounds. Set aside. Wash cabbage, shred.
In a large cast iron skillet (with a lid), put a pat of butter or vegetable oil to coat the bottom. Finish cooking potatoes along with the onion, until onions and potatoes are beginning to brown. Salt and pepper to taste in this step as well; you can add more throughout, if needed.
Add the sausage. Cook for a few minutes; sausage should start to brown.
Place all of the shredded cabbage on top of the onion, potato, and sausage mixture. Place a skillet lid on top of cabbage. This is going to cook down. Stir occasionally; you do not want the ingredients to get stuck.
Serve it up nice and hot.
Once at the table, my family puts vinegar and hot sauce–to our own liking. These two extra ingredients make the dish. It is really quite good.
