This dish is easy enough for a weeknight meal, because most of the cooking is pretty hands off, yet it’s delicious enough to serve to company. We like things spicy, so add jalapeño and cayenne according to your own tastes, however, I think the lime and brown sugar provide a nice balance to the heat. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season chicken with salt and pepper, add it to the pan and brown it until chicken is cooked through, about 7 minutes. Remove chicken from pan and set aside.
Add the remaining 1 tablespoon of oil to the pan. Sauté onion sprinkled with a little bit of salt until the onion begins to soften. Add jalapeño and scallions and cook until onion just begins to brown. Then add garlic and sauté until the garlic fragrant, about 1 or 2 additional minutes.
Combine oregano, cumin, paprika, cayenne, lime juice, and brown sugar in a bowl.
Return chicken to the pan with onions, jalapeño, and garlic, and pour the spice and lime juice mixture over top. Bring the mixture to a boil and then quickly reduce heat to medium-low. Allow liquid to reduce until it just coats the chicken. Then stir in the fresh cilantro and the juice of 1 whole lime.
Serve the chicken mixture in a soft tortilla spread with a few tablespoons of Mexican Black Beans (recipe can be found in my TastyKitchen recipe box) and topped with shredded cheese and/or Queso Fresco, lettuce, sour cream, and The BEST Guacamole (also can be found in my TastyKitchen recipe box).
