Description

This bright dish is as appealing to your eyes as your palate. It has the heat but it’s balanced by the creamy tortellini. It’s versatile in the sense that it can be served both as an entree or a side dish. Either way, it’s a crowd pleaser!

Ingredients

  • 9 ounces, weight Fresh Spinach And Cheese Tortellini
  • ¼ cups Extra Light Olive Oil
  • 2 teaspoons Minced Garlic
  • 2 teaspoons Sea Salt
  • ½ teaspoons Black Pepper
  • 1 whole Green Zucchini, Sliced Thin
  • 1 whole Yellow Zucchini, Sliced Thin
  • 1 whole Sweet Onion, Sliced Thin
  • 10 ounces, weight Rotel "Hot" With Habanero Peppers

Preparation

In a large sauce pan, cook pasta according to package directions. While pasta is boiling, saute olive oil, garlic, salt and pepper in a deep skillet over medium high heat for 2 minutes. Then add zucchini, onion, and Rotel. Cook until pasta is ready and add drained pasta to the skillet. Cover and cook on low for 15-20 minutes. This can be served as a main dish or as a side.
