This quick and easy dish is a delicious, spicy and HEALTHY twist on a classic comfort food. Not to mention, it is a one-pot meal!
1. Preheat a nonstick pan to medium high. Add chicken thighs and sear, about 5–6 minutes per side. In your crock pot, layer the peppers and onions, the seared chicken on top, and the remaining ingredients on top. Cook on low for 6–7 hours, or on high for 3–4 hours.
2. When chicken is ready, make your dumplings. Sift together dry ingredients. Whisk melted butter into milk. Stir milk/butter mix into dry ingredients. Fold in cheese and jalapenos.
3. Slowly drop spoonfuls of the batter on top of the chicken mixture. Cook on high for another 20–30 minutes.
Garnish with avocado, cilantro, hot sauce, and sour cream.
