This curry takes some effort to make but the end result is worth it. Once you taste it, it will become one of your favorite dishes. It is very tempting!
Heat oil in a wok over medium flame. When oil is hot, add onion and coconut red curry paste. Fry paste till it releases its oil, about 4-5 minutes. Add chicken pieces and reduce the heat. Let chicken pieces cook for 4-5 minutes.
Add salt, multi-spice masala and red chili powder. Stir well, add the water and cover with the lid. Let simmer for 8-10 minutes. You should see oil floating on top.
Switch off the heat and add chopped coriander leaves. Serve hot, with rice or any Indian bread.
