A sweet and spicy orange sauce over baked chicken breasts. The sauce can be made on its own as well simply by stirring sauce ingredients together in saucepan, bringing to a boil, and thickening as usual. Delicious!
Preheat oven to 400ºF. Place chicken in a 9×13 casserole dish and set aside.
In a bowl, combine juice, zest, vinegar, soy sauce, brown sugar, garlic, ginger, red pepper flakes and cumin. Stir together well and pour over chicken. Bake for 45 minutes or until chicken is cooked through.
Remove chicken from dish and pour juice mixture into a small saucepan over low to medium heat, reserving 1/2 a cup.
While sauce is heating, take reserved sauce and whisk in cornstarch, and then whisk into the rest of the sauce. Allow to thicken, about 5 minutes.
Pour sauce over chicken and serve.
