Try my version of this old fashioned family favorite! Tender, juice meatballs paired with a rich tomato sauce. Your people will be asking for more! The recipe is large, I recommend freezing extra sauce/meatballs for another time.
1) Heat a large stock pot over medium heat and add olive oil. Add onions, oregano, thyme, and basil and cook for about 10 minutes, stirring often. Add garlic, cook for one minute.
2) Add tomato paste and cook for 5 minutes, stirring often.
3) Add canned sauce, tomatoes, water, sugar, salt, and pepper. Turn the heat down to medium low and allow to simmer. Prepare the meatballs.
For the Meatballs:
1) Preheat oven to 375F. Line a cookie sheet that has sides with non stick foil. Set aside.
2) Add meats to a large mixing bowl. Add the rest of the meatball ingredients and mix well with hands. (Use gloves or meticulously clean hands with no cuts prior to doing the mixing).
3) Scoop meat balls with a large cookie dough scoop. Shape into balls and place on prepared sheet.
4) Bake for 30 minutes. Remove from oven and add immediately to sauce. Simmer 30-60 minutes. Makes about 32 large meat balls.
* Serve with a nice sprinkle of parmesan cheese.
