When you have to cook for the masses or are short on time, this is the best! And it was my favorite back in the day when my mom made it for me as a wee one.
Butterfly chicken breasts as evenly as possible.
Hammer out if thicker in different places.
Pre-heat oven to 375.
Slather the chicken fillets in the mustard and mayo mixture (you can change the ratio if you want more mustard flavor. OR use light mayo if you’d like!)
Then lay the fillet in the breadcrumbs and cover both sides. Roll up like a swiss cake roll and place in a Pyrex baking dish with the open end facing down.
Bake for 30 mins covered with aluminum foil and the last 15 mins uncovered.
