A delicious meat sauce that can be made with fresh or canned tomatoes.
1. In a large pan over medium-high heat, add onion and saute until translucent. Add garlic and saute one minute more.
2. Add ground beef to pan and cook until browned through. Once beef is browned, add the tomatoes to the pan. (If substituting canned tomatoes, use a large can of diced tomatoes.) Add herbs to sauce. Add a pinch of crushed red pepper and salt & pepper.
3. Turn down the heat and allow the sauce to simmer for 30 minutes. The tomatoes will cook down and release a lot of liquid. If you want a thicker sauce, add a tablespoon or two of tomato paste to thicken it up. Add a splash of red wine to cut the acidity of the tomato paste. Allow the sauce to cook another 10 minutes.
4. Serve over a big bowl of pasta. Bonus points if you serve it over Thick Spaghetti. You need a hearty pasta for this sauce.
