Description

My son’s godmother gave this recipe to me. It came from her mom. It’s simple and the flavors are just wonderful. I always make up a batch of meatballs to add to the sauce.

Ingredients

  • 1 clove Garlic, Chopped Fine
  • 1 Tablespoon Olive Oil
  • 2 cans Plum Tomatoes (16 Ounce Cans)
  • 1 can Tomato Paste, 6-ounce Can
  • 1 teaspoon Sugar
  • 2 teaspoons Basil
  • 1 pinch Baking Soda
  • Salt And Pepper, to taste

Preparation

Cook garlic in olive oil in a large sauce pan over medium heat until it softens and starts to turn color.

Add the two cans of tomatoes, breaking them up. (I use a potato masher.) Add the tomato paste, combine and bring to a boil then lower the heat to a simmer.

Add the sugar, basil, and the baking soda (cuts the acidity of the tomatoes). Simmer for 1 to 2 hours uncovered, stirring occassionally. If the sauce is too thick just add a bit of water. Salt and pepper to taste.

I usually add a batch of meatballs the last 15 minutes. Check out my meatball recipe – it’s in my TastyKitchen recipe box!
