A mild version of a Korean comfort food favorite called “dakdoritang.”
Combine garlic, ginger, onion, bell pepper, soy sauce, water, sugar, and ground pepper in a big pot. Add chicken and bring to a boil. Reduce to medium heat and cook for about 25 minutes. Add potatoes and carrots and cook for another 20 minutes, or until carrots and potatoes are tender, giving an occasional gentle stir. I usually let this sit on the stove for up to an hour before serving, so that the chicken, potatoes, and carrots soak up more of the cooking broth.
Serve chicken, potatoes, and carrots over rice. I know potatoes and rice is not your usual American combination, but I hope you like it once you give it a try!
