Description

Juicy chicken with creamy avocado and melted cheese.

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 2 Tablespoons Chili Powder
  • 2 Tablespoons Garlic Powder
  • 2 Tablespoons Onion Powder
  • 1 Tablespoon Cumin
  • 1 Tablespoon Paprika
  • 1 Tablespoon Salt
  • 2 Tablespoons Pepper
  • 8 Tablespoons Your Favorite Jarred Salsa
  • 2 whole Avocados, Sliced Into Thin Strips
  • 2 whole Limes, Juiced
  • 4 whole Slices Pepper Jack Cheese

Preparation

1. Preheat oven to 400ºF. Place chicken breasts on a baking sheet. In a small bowl, combine chili, garlic, onion, cumin, paprika, salt and pepper. Mix together and rub evenly on chicken. Cook for 25 minutes, rotating pan halfway through.

2. Take chicken out of oven. Preheat broiler. Spread 2 tablespoons salsa over the top of each chicken breast. Place 1/2 avocado, sliced, on top of each chicken breast. Squeeze 1/2 lime over each chicken breast. Gently top with a slice of cheese. Place back in oven and broil for 4 minutes, or until cheese is melted to your liking.

3. Let rest for 2 minutes and then serve. Enjoy!

Delicious! I halved the recipe for my husband and I but found I still had more then enough seasoning for two more breasts. I did end up making three so he could take one for lunch. Plenty of seasoning! Next time I will lightly pound the the chicken for more even cooking. Due to personal preference I omitted the avocado on the husbands and he declared it fantastic. It would not have been fantastic for him with the avocado. For myself I substituted Mexican Quesadilla cheese for the pepper jack which worked beautifully. I used Pace salsa and forgot to add the lime juice until the last second. This is definitely going into the dinner rotation. Thanks Meagan!
