Super easy sour cream enchiladas made simple with just 7 ingredients.
Combine shredded chicken and 1/2 cup cheese in a large bowl. Spoon chicken/cheese filling into tortillas and roll and place seam side down in a greased 9×13 baking dish (all 10 will fit with some creative squeezing).
Make sour cream sauce in the same bowl by combining sour cream, green chiles, garlic, and chicken stock. Mixture will be soupy. Pour over rolled tortillas.
Sprinkle remaining cheese over the casserole and bake for 25 minutes at 350 degrees.

These were a huge hit! the leftovers were “fought” over! We used shredded pork that we had from a previous meal, subbed vegetable stock for the chicken stock and only used half the can of green chilis because we had to use what we had on hand. They came out great and even my picky eater liked them!
