A delicious blend of vegetables and smoked sausage that’s hearty and healthy, too!
Chop potatoes, onion and red pepper into large bite size chunks. Combine all the veggies in a mixing bowl. Mix together the olive oil, garlic, salt, seasoning and vinegar. Pour over the veggies and toss to coat. Put veggies into a 9×9 baking dish and cover with foil. Bake for 1 hour at 350ºF. While the veggies are cooking, brown the sausages in a skillet. After the veggies have cooked, cut the sausages into bite size pieces and put on top of the veggies. Cover with foil and cook for an additional 15 minutes. To make this an even healthier dish, use smoked turkey sausage.
