Creamy, crunchy, smoky—the ultimate mac and cheese with the deep flavor of smoked Gouda and baked with a generous layer of breadcrumbs on top.
Cook the macaroni according to package directions, drain and set aside.
In a large pan, make the sauce by melting the butter and adding the flour. Whisk together to combine. Add the milk and continue whisking, on medium low heat, until the mixture begins to thicken (about 10 minutes). Whisk in the cheese until fully incorporated and season to taste.
Add the cooked pasta to the pan and stir to combine. You can bake it in the pan, if it’s oven proof, or pour the pasta into individual baking dishes.
In a small bowl, combine the breadcrumbs and olive oil and mix together with a spoon or your fingers. Sprinkle over the pasta and bake in a preheated 400ºF oven for 15-20 minutes or until the top is golden brown.
