Smoked Egg Salad Sandwich

Description
By using smoked eggs, you turn a classic sandwich into something amazing.
Ingredients
- 2 whole Smoked Eggs, Chopped (see My TastyKitchen Recipe Box)
- ½ stalks Celery, Chopped
- 1 Tablespoon Diced Shallot
- 2 Tablespoons Flat-leaf Parsley, Chopped
- 3 Tablespoons Mayonnaise
- ¼ teaspoons Cracked Black Pepper
- 1 whole Sandwich Roll, Split In Half
Preparation
Start by adding everything but the sandwich roll into a bowl. Gently mix and fold to incorporate all of the ingredients. Taste and season with salt if you desire.
Add to the bottom of the sandwich roll then add the top and dig in.
The result is pretty darn awesome. The smoked eggs by themselves are good, but when you incorporate them into the other ingredients and make a sandwich, well, it just makes everything a whole lot better. Give this a shot if you are going to make an attempt at smoking eggs. I hope you enjoy.
