Use either regular Dr. Pepper or Coca Cola. It’s a great recipe for winter or summer when you’re too busy to cook a pork loin or roast!
Layer chopped onion, carrots, celery, then chunked raw pork in a slow cooker. Empty chipotle peppers with sauce over it all. Pour the soda over and top with freshly ground pepper.
Cover and set slow cooker on low for 4-6 hours. Remove chunks of pork and shred. Add the cornstarch and brown sugar and use an immersion blender or regular blender until it is all smooth (if you don’t like as much spiciness, discard a few of the whole chipotle peppers first). Return the sauce to the crockpot and add the shredded pork back in. Cook on low for 2-3 more hours.
Serve over steamed cauliflower, or on rolls, etc.
