Adapted from the recipe on the back of the malt vinegar bottle, it’s so much easier in the crock pot!
Spray the inside of your crock pot with nonstick spray and place the chicken in the pot. In a separate bowl, whisk together the juice from the peaches, orange juice concentrate, malt vinegar, sugar, and seasonings. Pour over and around the chicken, adding a little water if needed. (I filled mine until just the tops of the chicken breasts were peeking above the liquid.) Add half the peaches, reserving the rest for later.
Cook on High for 4 hours, or Low for 6-8 hours. Add the rest of the peaches just before serving for a mixture of soft, cooked peaches and firmer, uncooked peaches. If you like a thicker sauce, add some cornstarch after removing the chicken. Serve over white or brown rice with a side of steamed veggies.
