This is a super simple recipe for delicious lemon chicken that, when cooked properly (either baked or grilled), is amazingly juicy and flavorful.
1. Preheat oven to 425 degrees.
2. Lightly grease a baking dish.
3. Grate lemon peel into the dish.
4. Squeeze lemon juice (approximately 1/4 cup) into the dish.
5. Add oregano, garlic, olive oil, salt, and pepper and stir to mix.
6. Place chicken into the dish and spoon oregano mixture over the chicken.
7. Cover dish and bake for 20 minutes.
8. Remove dish and again spoon oregano mixture over the chicken.
9. Reduce heat to 400 degrees and cook for another 30 minutes, or until cooked through and no longer pink.
10. Enjoy!
Note: if you prefer, marinate the chicken in the oregano mixture in advance. This typically lets the lemon flavor saturate more into the chicken.
To grill, just complete steps 1-6 and then grill until cooked through.
