A simple, step-by-step guide for crispy-skinned, super-juicy roasted chicken breasts.
1. Preheat the oven to 375ºF.
2. Heat an oven-safe skillet over medium heat.
3. Dry the chicken with paper towels and season generously with salt and pepper.
4. Add the olive oil to the skillet and allow to heat.
5. Add the chicken breasts, skin side down, and cook for 7-8 minutes.
6. Remove from heat, turn chicken breasts over and place the pan in the oven. If your skillet is not oven-safe, transfer the chicken to a baking sheet.
7. Roast for 30 minutes, or until a meat thermometer inserted in the thickest part of the chicken reads 165ºF.
