Buckwheat soba noodles coated with a creamy sesame peanut sauce with a little kick from crushed red peppers. Topped with cilantro and green onions. Super fast and easy!
Cook soba noodles according to package directions. Drain. If chilled salad is preferred, drain and rinse under cold water. If hot, simply drain.
Mix next 7 ingredients (peanut butter, rice wine vinegar, brown sugar, garlic, sesame oil, ginger, and red chili flakes) together in bowl and whisk until well-blended and creamy. Drizzle olive in while whisking. If desired, sauce can be heated in the microwave for about 60 seconds if warm noodles are preferred. Pour over noodles. It’s delicious both ways! Add any chopped veggie of your choice and chicken for a great healthy meal!
