So here is the story behind the “SICK Chicken” recipe! This easy and yummy casserole became popular with our family because my mom would deliver this to our house if we were sick, had just delivered a baby or just sick and tired of cooking! So my nephew named the dish “Sick Chicken!” In his little mind, when someone was sick, this dish would arrive at your house. This dish was named long before “sick” meant “good” or “cool.”
Place the chicken in the bottom of a medium size casserole dish. In a small bowl, dilute the soup with 1 cup of chicken broth. Spread evenly over the chicken. Cook the stuffing according to the instructions on the box. Spread the stuffing over the soup. Bake at 350 degrees for about 30 minutes or until it is good and bubbly! I always serve this with coleslaw and cranberries. It is like a smaller version of Turkey Day! So there you go! “Sick Chicken” rocks!
