Shrimp, sweet onions, tomatoes, and salty feta cheese. All hanging out together. Simmering. Serve it with a side of peas or rice pilaf and you’ve got yourself one easy and terrific meal.
Preheat oven to 450°. Coat an 11×7 baking dish with cooking spray and set aside.
Heat a large nonstick skillet over medium-high heat. Add oil to pan, swirling to coat. Add onion and garlic to pan and sauté for 2-3 minutes. Add lemon juice, wine, oregano, pepper, and tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes. Stir in shrimp.
Place mixture in baking dish. Sprinkle cheese evenly over mixture and bake for 10 minutes or until shrimp are done and cheese melts. Sprinkle with parsley; serve immediately.

@tracivitug – lol…I get you on the fresh garlic. Nothing compares. I’m just always so pressed for time with two little tots tugging at me. I’m so glad you enjoyed it! This is one of my favorites go-tos.

this is simple and delicious! my only change was that I used fresh garlic (always!), left out the parsley and doubled the feta. the broth-y sauce is to die for! I served it over quinoa and it was pretty darn good. perfect for a nice, light summer meal.
