Description

This is my favorite shrimp scampi recipe! It’s lemony, buttery and perfect over rice.

Ingredients

  • 1 pound Shrimp, Peeled And Deveined
  • ¼ cups Onion, finely chopped
  • 4 cloves Garlic, Minced
  • 1 teaspoon Dried Parsley Or 2 Sprigs Fresh
  • 1 stick Unsalted Butter
  • ¼ cups White Wine
  • 2 Tablespoons Fresh Lemon Juice
  • 2 dashes Salt And Pepper, to taste

Preparation

Melt butter over medium low heat. Saute onion, garlic and parsley in butter until tender. Add shrimp and cook, stirring frequently, about 5 minutes or until shrimp are pink. Remove shrimp with a slotted spoon and keep warm. Add wine and lemon juice to the butter mixture and simmer for 2 minutes. Season with salt and pepper. Pour sauce over the shrimp. Serve with prepared white rice.

I am going to make this tomorrow night for my son’s 4th birthday…his request of his favorite dinner was for lobster and steak, but I think he is going to have to enjoy shrimp and steak instead. :) I will post a review after the party!

I modified this one, and made it with chicken instead of shrimp. I also added diced bell peppers and sliced mushrooms at the same stage as the onions. Then I decided there wasn’t enough sauce (as I was going to serve it over noodles), so I added about a cup of whole milk, then sprinkled it with a few tablespoons of white flour to thicken it slightly.

It was DELICIOUS, and a huge hit with the whole family. It had a very scampi-esque flavor, with the butter, lemon juice, and garlic, but the sauce was thicker and stuck to the noodles better.

I love modifying recipes to fit what I have on hand!

Yum! Thanks for sharing this recipe! I fixed this for my family tonight and it was a big hit. I was told to not only keep this in my box but next time fix a double batch so there will be leftovers.

My first attempt at shrimp scampi was the night of my son’s 4th birthday, and I paired with a beef tenderloin roast and country green beans. I was serving 15 people. This was a delicious recipe, but maybe a little too lemony for my taste. As a disclaimer, I was a little crazed in the kitchen making all of these dishes at once, so it very well could be my fault…maybe I added too much lemon juice! :) As I was tasting, I added a little cream to cut down on the lemon and thicken the sauce a bit. It was great. Thanks for sharing!
