Description

This is an easy and healthy recipe. Perfect for summer nights.

Ingredients

  • FOR THE CEVICHE:
  • 2 pounds Peeled And Deveined Cooked Shrimp
  • ½ cups Red Onion, Sliced
  • 1 Tablespoon Capers
  • ¼ cups Cilantro, Chopped
  • 1 whole Mango, Peeled, Pitted, And Diced
  • FOR THE DRESSING:
  • ½ cups Olive Oil
  • ¼ cups Vinegar
  • 1 whole Lemon, Juiced
  • 1 teaspoon Sugar
  • 2 ounces, fluid Caper Juice

Preparation

1. Whisk all of the dressing ingredients together in a bowl. In a big bowl add the shrimp, onion, capers, cilantro and mango.
2. Toss the dressing in with the shrimp.
3. Let it marinate in the fridge for a minimum of 2 hours.
4. Enjoy!

If you are a shrimp (any way I can make it-kind of gal) person you have to make this! Super simple, most ingredients in my freezer, pantry. Love it’s flavor combination. Great Job! CLW
