Yummy and healthy, even your kids will eat this!
Cook fettuccine. While water is preparing to boil, put olive oil in a pan and add shallots. Sauté for 30 seconds. Add shrimp and cook for 3 minutes. (Don’t overdo this. Overcooked shrimp are just BAD.)
Add chicken broth, lemon, and salt. Bring just to a boil. Add cooked fettuccine (the noodles should be done, since they only need to cook for about 3 minutes) and toss. Add spinach and toss, just until wilted. Serve.
You can add things like toasted pine nuts, roasted red peppers, or chopped tomatoes.
I added petite diced tomatoes, drained. Ooh, I just thought of artichoke hearts–those would be good, too. You could also add mushrooms, parmesan, feta, whatever! Garlic. Mmm.
