This recipe is one I devised using what I believe are ingredients commonly found in a Carolina kitchen. It is a little sweet and tangy and is a good consistency to serve over grits.
Prep time varies depending on your shrimp. Allow about 10 minutes for shelling if necessary.
1. Heat oil in a large pot.
2. Add bacon, onion and pepper. Once the onions and peppers soften…
3. Add tomatoes, bourbon, BBQ sauce and water.
4. Let simmer until the mixture thickens.
5. Add shrimp and cook 3-4 minutes or until shrimp is done and no longer opaque. Do not overcook your shrimp.
Serves 4-6.
Serve over grits prepared to your liking.
