A quick one-dish supper that is healthy and economical too!
Preheat a large non-stick skillet on medium. Crumble beef and add beef, garlic, onion, and carrots to the skillet. Cook and stir 5 minutes. Add the diced tomatoes and taco seasoning; stir. Layer the diced potatoes over the mixture. Sprinkle the green beans over the potatoes. Sprinkle with salt and pepper. Do not stir. Place the lid on the skillet and cook for 10-12 minutes longer, until the vegetables are tender. Remove from heat; let stand 5 minutes to finish cooking. Sprinkle with shredded cheese. Serve out of the skillet to a hungry family.
