A quick, super easy recipe that my kids love. A great meal to give to those in need (that’s how I got the original recipe). I keep tweaking and adding to this, depending on my mood.
Brown hamburger and then mix together with the cream of mushroom soup, and corn. Place in a casserole dish.
Gently stir together the cream cheese, bacon bits, and 2 cups of cheese (if you stir it too hard, you won’t have really yummy cream cheese pockets). Stir into the meat mixture.
Spoon the potato mixture all over, and then smooth it out (if you dump it on and spread it out, you will push out all of the meat mixture). Sprinkle the remaining cheese on top and bake at 350 F until bubbly and cheese is starting to brown.
Enjoy!
Note on pan size: You want to use a large pan. If the potatoes are higher than the sides of the pan, you will have a mess in your oven.

Just made this tonight and it was WONDERFUL! I was scrambling for dinner so just searched hamburger recipes and this came up. I was hesitant because it was so easy and required so few ingredients but I was mistaken. The cream cheese made it rich and flavorful. I did omit the corn because my husband hates corn (unbelievable!) but next time I think I will add a can of drained green beans and it will be perfect! This is a great recipe because all the ingredients and staple panty items so I always have them available.
