Description

This delicious and easy-peasy Mexican inspired casserole is a guaranteed slam dunk in the kitchen. Use what you have and what you like as substitutes for any of the ingredients!

Ingredients

  • 12 whole Hard Taco Shells
  • 1 pound Ground Meat (Beef, Turkey, Or Chicken)
  • 1 package (about 1 Oz. Packet) Taco Seasoning
  • 1 jar (12 To 16 Oz. Jar) Taco Sauce (Medium Heat)
  • 1 can (4 Oz. Can) Roasted Green Chiles
  • 1 can (15 Oz. Can) Beans (Black, White, Kidney)
  • 2 cups Sharp Cheddar Cheese

Preparation

1. Preheat oven to 375ºF.
2. Crumble 4 taco shells in the bottom of a greased 8×8 casserole dish.
3. Brown meat in a large skillet on the stovetop.
4. Add seasoning, sauce, peppers, and beans to the cooked meat (you could also use an onion, some olives … sky’s the limit!).
5. Layer half the meat mix over the taco shells, then half the cheese. Repeat and finish with a final layer of taco shells.
6. Bake for 20 minutes, until cheese is melted and bubbly.
