Description

Decadent and healthy! The sweet slaw is incredible.

Ingredients

  • 1 pound Fresh Scallops
  • ⅛ teaspoons Sea Salt
  • ¼ teaspoons Black Pepper
  • ½ Tablespoons Garlic Powder
  • 4 Tablespoons Olive Oil, Divided
  • ½ whole Mango, Sliced Thin
  • 1 whole Shallot, Sliced
  • ¼ whole Red Cabbage, Sliced Thin
  • ⅓ cups Balsamic Vinegar
  • Salt And Pepper, To Taste

Preparation

Season scallops with salt, pepper, and garlic powder. Heat a skillet on medium-high heat and add 2 tablespoons olive oil. Once the oil is hot, add scallops. Let cook on each side until brown, about 4 minutes.

In a separate skillet, heat 2 tablespoons olive oil on medium heat. Add mango, shallots and cabbage. Cook for about 8-10 minutes, stirring occasionally. Add balsamic vinegar and cook for 5 minutes. Season with salt and pepper if needed.

Top mango slaw with scallops. Add rice or pasta on the side.

Made this tonight. The scallops were lovely…but I’m not completely sold on the slaw. Maybe I should have liced the cabbage even thinner. The flavors with the balsamic vinegar were really nice, but the texture was more of a contrast to the softness of the scallop than I wanted.

I made this last night and loved it! The slaw was a delicious blend of sweet mangos and tangy flavor.
