A lovely creamy and rich seafood chowder that’s quick and easy to serve up! My friends rave about it when I serve it at my dinner parties!
1. Make a creamy mash out of the potatoes and set aside.
2. Dice the carrot and onions and fry them in a medium-large pot.
3. Add the mussels and calamari to the pot to cook, followed a bit later by the prawns.
4. Add the white wine and some black pepper to the pot to deglaze the seafood mixture. Stir and add a pinch of sugar and some salt.
5. Sprinkle the flour on top of the seafood mixture so that it covers the entire base of the pot. Stir the seafood mixture – the flour should stick to the seafood.
6. Quickly pour in a jug of water – just enough so that it covers the seafood mixture. Stir well.
7. Stir in the mashed potato.
8. Pour in the cream and season to taste. It should thicken once it boils.
9. Spoon the seafood chowder into 6 bowls
10. Sear the scallops in a hot pan and place a scallop on top of each bowl of seafood chowder.
11. Garnish with the chopped parsley.

Oh Man! I cannot wait to make this. I used to eat this all the time when I managed a resto in Maui, Hawaii. I had to stop when i couldnt’ fit into my jeans. lethal but so kind to the tongue!
