When I moved to the South nearly 20 years ago, it did not take me long to discover the Southern favorite shrimp and grits. I decided that I would try my hand at making the dish my own and using my favorite seafood: scallops. I hope you enjoy this recipe as much as I do!
In a saucepan, combine condensed chicken broth with cream and bring to a boil. Gradually pour in grits, stirring constantly. Cover and allow to come to a boil, then immediately reduce heat to low and simmer for about 6 minutes (may take a few minutes more or less). Add cheese and stir until cheese melts.
While your grits are cooling slightly, melt butter in nonstick skillet. Saute scallops until they are done completely through and browned slightly on both sides.
Place a cup of the grits on a plate. Top with crumbled bacon (and more cheese if you would like) and 3-4 scallops per serving. Dig in!
