This goes so well with pork chops—it’s sweet and savory made with rosemary, honey and sweet onion.
Note: I used a slow cooker to make this, but if you don’t have one/want to make it on the stove top, just cook on medium-low and keep a closer eye on it (and stir more frequently to prevent burning).
1. Turn the crock pot to high to preheat while you prep the ingredients.
2. Peel, core and chop the apples into about 1/2 inch pieces. Chop the onion into similar-sized pieces and chop the rosemary as finely as possible.
3. Add all of the ingredients to the pot and stir to combine. Place the top on the pot and allow to cook for about 2 hours, or until the apples are very soft, stirring about every 20-30 minutes.
4. Spoon the apple mixture into a blender and puree until very smooth. Serve with pork chops.
