Very easy and oh so good!
Preheat oven to 350F. Peel potatoes and cut in chunks. Small red potatoes can also be used for a time saver (peel can be left on). You would need a few more potatoes though. Throw chunks in a casserole dish. Cut sausage in half and throw in the dish with the potatoes. Slice onion and put in the dish. Add 1 cup of water. Salt and pepper to taste. Cover dish and put it in the oven for 45 minutes. Remove cover to brown. Cook for 15 more minutes or until potatoes are tender.
I like to mash my potatoes a little and add some of the juice from the bottom of the dish along with some butter (ok, a lot of butter). I then add more salt and pepper to taste. This recipe is so good and so easy!
My mom used to use a combo of mild and spicy sausage. I’m a wimp, so I usually only use mild. Turkey Italian sausage can also be substituted.

This is my go-to dinner when we’re busy. We add green beans instead of onion. Delicious and super easy!
