This chicken is great when served with refried beans and Mexican-flavored rice. Always a hit in my household! The chicken is always really moist and tender.
Preheat oven to 375 degrees. Place the chicken on a baking sheet (I use a baking stone) and sprinkle both sides of the chicken with the taco seasoning mix. Place the salsa over the chicken and cook for 25-30 minutes until tender and juicy. Sprinkle cheese over the chicken and place back into the oven for another 3-5 minutes. Serve and enjoy!

The family really enjoyed this! The only thing I did different was pound the chicken breast to a flatter and more even consistency. But, they were really big breasts. I also only used three breasts because of their size.
My 5 year old asked for thirds, and my newly finicky almost 7 year old asked for seconds. Even my husband had seconds (and he usually doesn’t even if he loves it). Oh, I liked it, too!
I served it with avocado and topped mine and my husband’s with fresh cilantro. That elevated it for the adults…
